It’s peach season and we found this recipe for bacon wrapped peaches drizzled with balsamic vinegar at Foodie Crush Magazine and had to share. (We have linked to their recipe below) I have to be honest and tell you that I immediately thought of using Prosciutto di Parma instead of bacon (once Italian, always Italian)! Either way it is delicious. The best part is the balsamic glaze drizzled on top and it is soooo easy to make you’ll wonder why you ever overpaid for it in a store and I’m going to teach you how. Are you ready?
2 cups balsamic vinegar
2 tbsp brown sugar OR 1 tbsp honey
2 sprigs (4″ long) fresh rosemary
4 small sprigs fresh thyme
In a heavy sauce pan:
Add vinegar, brown sugar OR honey and ‘optional’ ingredients. Bring to a low boil then reduce heat but maintain a steady simmer. Reduce down by 1/3. This should take about 15 mins or so. Stirring occasionally. The vinegar will be thick and syrupy. I like to taste it as it’s reducing so I get the exact flavor I want. Pour balsamic glaze into a bowl. I prefer a squeeze bottle (cheap at Michaels in the cake section). If you have chosen to add an ‘optional’ ingredient, first pour the balsamic through a strainer and discard the rosemary or thyme.
