No Bake Protein Bars- Cranberry and Oats

My kids love homemade protein bars and frankly so do I.  What I love more is this no bake protein bar with cranberries and oats.  It may be one of my favorites. The ingredients are simple, nutritious and filling.  No bake recipes are great because the prep time is quick. I make a new batch each week and keep them individually wrapped in my refrigerator for an easy, quick wholesome snack or meal. My husband, Chris, and I have been hiking a lot and the kids are in sports so high protein snacks are in high demand around my house.

The chewiness of the cranberries mixed with the crunchiness of the oats makes these homemade protein bars totally satisfying! If you want, double up on the recipe and freeze some so you never run out.  I hope you enjoy these as is or if you to put your own spin on them, great, let me know.  INGREDIENTS

  • 1 1/2 cup raw almonds, whole or sliced
  • 3/4 cup rolled oats + 1/2 cup for topping
  • 1 tbsp oat bran
  • 1/4 cup almond butter
  • 3 tbsp coconut oil + 1 tbsp for topping
  • 3 tbsp agave or honey
  • 1 tsp pure vanilla extract
  • Pinch of salt OR sea salt
  • 1 tsp cinnamon for topping
  • 1/2 cup dried cranberries

 

PREPARATION

In a food processor pulse almonds until flour-like. Add oat and oat bran and pulse until ‘flour-like- again. In a large bowl add almond butter, 4 tbsp of coconut oil, honey or agave, vanilla extract and salt. Mix well.  Stir in cranberries. In a parchment-lined baking dish (you can use wax paper) press the mixture into bottom of dish. In a small bowl mix cinnamon, 1 tbsp coconut oil and 1/2 cup oats. Mix well. Sprinkle on top of bars and press slightly. Freeze for 30 mins. Cut, wrap and store in refrigerator or eat!
