What is it about caramel that makes everything better? A chocolate cookie is good enough, but when you go and add caramel, pure nirvana. These caramel filled chocolate cookies are just that. The picture alone makes me want to make these, so I did. Can you see my smile?
Caramel Filled Chocolate Cookies
- 1 cup unsalted butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 3/4 cup unsweetened cocoa powder
- 2 tbs white sugar
- 48 chocolate-covered caramel candies
Instructions for making caramel filled chocolate cookies:
In a bowl, whisk flour, baking soda and cocoa.
In a stand mixer fitted with the paddle attachment, beat butter and sugars until smooth and creamy. Add in eggs, one at a time. Add vanilla. Gradually add flour mixture to butter mixture, beating until combined. Cover and chill for 2 hours.
Preheat oven to 375 degrees F.
Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.
These cookies didn’t make it into my cookie cookbook, but I still love them. If you want more great cookies recipes check out Cookies At Home on Amazon.
