The whole family really enjoys this chewy coconut cookie recipe. In my case, my favorite kind of cookie is a chewy cookie, which would make my favorite coconut cookie this one. It’s simple, which is why I like it so much. It makes a wonderful addition to my afternoon tea.
Chewy Coconut Cookie Recipe
- 1/2 cup sugar
- 1 egg, large
- 1/2 tsp vanilla extract
- 1 1/3 cups flaked coconut
- 1 1/4 cups AP flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
Preheat oven to 350 degrees F.
In a bowl, whisk the flour, baking soda, and salt; set aside.
Using a stand mixer fitted with the paddle attachment, cream butter, brown sugar, and sugar until smooth. Beat in the egg and vanilla. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto a parchment lined baking sheet. Cookies should be 3 inches apart.
Bake for 8 to 10 minutes or until lightly toasted. Cool on wire racks.
