Oreo Stuffed Chocolate Chip Cookies

 

Oreo Stuffed Chocolate Chip Cookies?  This is like the turducken of cookies (I know it’s missing a layer).  I would have never thought to shove Oreos inside chocolate chip cookies, but I’m glad someone did!

**Update – I’m going to try to layer a caramel on top of the Oreo and then wrap it in chocolate chip cookie dough.  What do you think?  At least then my turducken analogy would be accurate!

 

Oreo Stuffed Chocolate Chip Cookies

  • 2 sticks unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1 cup sugar
  • 2 eggs, large
  • 1 tbsp vanilla extract
  • 3 1/2 cups AP flour
  • 1 tsp Kosher salt
  • 1 tsp baking soda
  • 10 oz bag semi-sweet chocolate chips
  • 1 bag Oreo Cookies, double stuff optional

Instructions:

Preheat oven to 350 degrees F.

In a stand  mixer fitted with the paddle attachment, cream butter and sugars until well combined.  Add eggs, one at a time,  add vanilla, beat until well combined.

In a separate bowl whisk the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie.  Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.  Roll into a ball as best as you can.  Place on a parchment  lined baking sheet and bake cookies 9-13 minutes or until cookies are baked to your liking.   Let cool for 5 minutes before transferring to cooling rack.
