Being a cheese maker I love incorporating cheese into a recipe any time I can. This Panko Mozzarella Stick recipe has to be one of my favorites, because mozzarella sticks are a downfall of mine and now I can eat them without all the guilt. Low fat mozzarella sticks can be purchased from most grocery stores along with Panko whole wheat bread crumbs to turn this recipe in to a much healthier version of the original. And since they are baked and not fried, there is no added fat from the oil, yay! oh, and did I mention they are delicious? I promise you, you will never want the fried version again, really.
8 cheese sticks, low fat, cut in half
1/2 cup Panko whole wheat bread crumbs
1 egg, beaten
2 tbsp flour
1 tbsp Italian seasoning
1 tbsp Parmesan cheese, shredded
Marinara sauce for dipping (optional)
Unwrap cheese sticks, cut in half and place on a lined cookie sheet. Freeze.
Preheat oven to 400 degrees.
In one bowl beat egg. In another add flour. In last bowl mix breadcrumbs, Parmesan cheese and Italian seasoning. Set aside.
Working one at a time, roll cheese sticks in flour, then egg and then breadcrumb mixture. Place on parchment lined cookie sheet.
Bake for 10 minutes, flipping half way through.
*Tip: cheese sticks must be frozen. If they are not, they will melt too quickly and fall apart.
