Roasted Chickpea Snack

Hungry and constantly moving?  Got kids?  If you’re like me you have no time to stop but you want something that tastes good, satisfies your cravings, is good for you.  I have been loving this roasted chickpea snack.  Chickpea snacks are great.  They are one of the healthier foods around aiding in everything from cholesterol reduction to iron boosts to stabilizing blood sugar,  not to mention they are an excellent source of protein. And they are rich in fiber.  I usually make a batch of these (2 cans) at night for the next day.  You can do all of the prep work for this healthy snack in about 5 minutes.  In fact, writing this post is making me hungry so I am going to make a batch when I finish.

Healthy Chickpea Snack

Ingredients(spices can be substituted to your likeness):

2*15 oz cans chickpeas, drained

1/2 tsp salt

1 tsp sea salt

1 tsp cumin

1 tsp paprika

1 tsp ground coriander seeds

1 tsp cayenne

1 tsp pepper

1 tsp garlic powder

1 tsp ground ginger


In a bowl mix together chickpeas and spices. Let sit for 10-15 mins.  Place on a baking sheet sprayed with non-stick cooking spray.  Spread out in a single layer.  Bake on 400 for 25 mins and the lower oven to 350 and bake for another 10-15mins. Remove from oven and let completely cool on baking sheet before you transfer to a bowl or plastic container/storage bag. Allowing chickpeas to completely cool will insure their crunchiness.  If you store them while they are still warm they will get soft and chewy.  Enjoy!
