Spinach and Feta Burrito


I love eggs. I love spinach. I love f eta (cheese…duh). I love burritos. Born is the spinach and feta burrito! This breakfast burrito is definitely one of my favorites. It  is easy to make and can be made with whole eggs or egg whites, a flour or wheat tortilla and salsa of your choice.  And for an extra punch of nutrients and fiber I like to add a slice of a fresh, ripe avocado.  You can make this spinach, egg and feta burrito in 3-4 minutes.  It is one of my favorite egg white recipes for breakfast.  And the feta gives it a nice creaminess and add some real flavor.  Now, I made the feta in mine (my day job is as a cheesemaker) but you should just find a nice, locally made feta to take your breakfast to the next level – and to support a local business.


  • 1 tortilla, wheat or flour
  • 1 1/2 cups fresh spinach
  • 3 egg whites  OR 2 whole eggs
  • 1 tbsp feta
  • non-stick cooking spray
  • salsa
  • avocado (optional)
  • salt & pepper to taste


Spray a fry pan with a non-stick cooking spray.  Heat pan on med/high until hot.  Add spinach and sprinkle with a little salt and pepper.  Cook spinach for about a minute until slightly wilted.  Add eggs, salt and pepper again.  When eggs are almost done fold in feta.  Meanwhile heat the tortilla in a microwave for 7-10 seconds.  Remove from microwave and spoon your eggs onto the tortilla.  Top with salsa and avocado (optional).  Wrap up into a burrito.  Cut in half and enjoy.  This is one of my favorite quick eggs recipes, I hope you like it too.
